Candied Nut Spring Salad


So delicious! I can't wait to go to the store and pick up more!

Ingredients

  • 1/3 cup pecans, coarsely chopped
  • 1 TBS butter
  • 1 TBS cinnamon sugar
  • Earthbound Organic Herb Mix Salad
    • (includes dill, parsley, cilantro, and baby greens, delicious!)
  • 4 strawberries, sliced 
  • 1/4-1/2 onion, very thinly sliced
  • olive oil (extra virgins!)
  • red wine vinegar ~OR~ lemon juice
  • salt
  • pepper
 

Instructions 

  1. Heat oven to 250 degrees. Melt butter in a bread pan while oven is heating, or other smallish pan, and mix in nuts when melted. Cook for 5-10 minutes, checking for toasted-ness. Alternatively, you could use a toaster oven for this job. 
  2. Mix salad mix, strawberries, onions and pecans. 
  3. Add oil and vinegar/lemon juice as desired. 
  4. Sprinkle with salt and pepper for added flavor.
