Cinnamon Spice French Toast


A favorite at our house! Top with maple syrup, powdered sugar, fresh or frozen fruit or all three to make it extra special! 

 

 Ingredients:

8 slices bread
4 eggs
1 tsp cinnamon
1 TBS brown sugar
1 1/2 tsp vanilla
1/4 tsp nutmeg
1 1/2 cups milk
maple syrup


Instructions:

1. Heat pan over medium heat.
2. Optional: toast bread ahead to time
3. In a pan or bowl wide enough for a slice of the bread to fit in the bottom, beat several eggs.
4. Add brown sugar, cinnamon, nutmeg, vanilla. Mix well.
5. Add milk to mixture to thin it out. Beat well.
6. Dip bread slices in mixture, coating both sides. Let excess drip off for a second then place in pan.
7. Let cook several minutes on each side, until golden brown.
8. Serve plain or with syrup.
9. Leftovers are best reheated in a toaster.

Sausage Stuffed Bell Peppers

Ingredients: 

  • 1lb sausage
  • 1 cup rice (uncooked)
  • 4 bell peppers 
  •  1/3 cup shredded cheddar cheese
  • 1/2 (12-14) oz can diced tomatoes
  • 1 chicken bullion cube
  • 1 TBS basil
For the sausage, my husband and I usually make it up quick with a pound of ground beef using THIS simple recipe.

Directions:

  1. Brown the sausage; cook rice according to package directions. You can add the chicken bullion cube to the rice while it is cooking so it is dissolved while the rice cooks. Both will take about 20 minutes, and you can do them at th same time.
  2. While sausage and rice are cooking, cut the top off the bell peppers and remove any seeds inside. Place about 1 1/2 inches water in a microwave safe pan and place the peppers upside down in the water. Microwave for 5-7 minutes, until slightly tender.
  3. When all is done, add the sausage, tomatoes, and basil to the rice and mix thoroughly.
  4. Add 1/2 the cheese and mix in.
  5. Gently put the rice and sausage mixture into the peppers. Sprinkle remaining cheese on top.
  6. Broil 5-10 minutes in oven or toaster oven until cheese is melted/browned slightly.
